Sticky Date Loaf

For the Cake

  • 2 cups 7star Cake flour
  • 1 cup pitted dates, chopped
  • 1 cup boiling water
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 eggs
  • 1/4 cup honey
  • 1/4 cup milk

For the Caramel Topping

  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1/4 cup milk
  • 1 tsp vanilla extract

How to Make

Preparing the Cake

  1. Preheat your oven to 350°F (180°C). Grease a 9×5-inch loaf pan and line it with parchment paper.
  2. In a large bowl, combine the chopped dates, boiling water, and baking soda. Stir to combine and let sit for 10 minutes.
  3. In another bowl, cream together the softened butter and brown sugar until light and fluffy. Add in the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  4. Add the 7 Star Cake flour to the butter mixture, alternating with the honey and milk. Mix until just combined.
  5. Add the date mixture to the flour mixture and stir until evenly combined.
  6. Pour the batter into the prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted into the centre comes out clean.
  7. Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Preparing the Caramel Topping

  1. In a saucepan, melt the butter over medium heat.
  2. Add the brown sugar and milk, stirring until the sugar is dissolved.
  3. Bring the mixture to a boil and cook for 3-4 minutes, stirring constantly, until the mixture thickens.
  4. Remove from heat and stir in the vanilla extract.
  5. Let the mixture cool for a few minutes, then pour it over the cooled loaf.
