Peanut Butter Brownies

Ingredients

  • 1¼ cups 7 Star All Purpose Wheat Flour (150g)
  • 1 cup unsalted butter (227g)
  • 1 cup semisweet chocolate chips divided (175g)
  • ½ cup unsweetened cocoa powder (50g)
  • 1 teaspoon salt
  • 1 cup granulated sugar (200g)
  • 1 cup firmly packed light brown sugar (220g)
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • ½ cup creamy peanut butter

How to Make

  1. Preheat your oven to 180°C. Grease an 8×8-inch square baking pan with baking spray and line it with parchment paper.
  2. Melt butter in a small saucepan over medium heat. Remove from heat and add 1/2 cup chocolate chips. Stir until fully melted. Transfer to a large bowl and let it cool for a few minutes. (You can also melt the butter and chocolate chips in a large bowl in the microwave.)
  3. In another bowl, mix the flour, cocoa powder, and salt.
  4. Add the sugar, eggs, and vanilla to the melted chocolate mixture and whisk until smooth. Fold in the flour mixture until well combined. Then, fold in the remaining 1/2 cup of chocolate chips.
  5. Pour the batter into the prepared pan and spread it evenly with a spatula.
  6. Spoon peanut butter over the batter in teaspoonfuls. Use a knife or screwdriver to swirl it into the batter.
  7. Bake for 35-40 minutes, or until the centre doesn’t wobble when the pan is gently shaken. If you want a super fudgy centre, bake for 30 minutes instead. Cover the brownies with foil after 25 minutes if the peanut butter starts to brown. The bake time may increase by 5-10 minutes if covered.
  8. Let the brownies cool completely in the pan before slicing.
