Vegetarian delights for the month of October, courtesy of 7 Star! Here’s how we knead and fold the perfect Veg Frankie, a wholesome dinner meal for the family, and an ideal homemade snack for an outdoor picnic with friends. It’s simple, quick, yummy and meat-free! Twist and turn the ingredients, seasonings and spices as you please and let us know how your version of Veg Frankie turned out.
Ingredients
- 7 Star Wholemeal Flour – 1 cup
- 7 Star All Purpose Flour – 1 cup
- Boiled potatoes – 4
- Green chilli – 2
- Chopped ginger
- Chopped garlic – 6 cloves
- Red chilli powder – ½ teaspoon
- Coriander powder – ½ teaspoon
- Roasted cumin powder – 1 teaspoon
- Black pepper powder – ¼ teaspoon
- Roasted curry powder – ½ teaspoon
- Salt
- Cooking oil – 2 tablespoons
- Butter – 1 teaspoon
- Tomato
- Cabbage
- Carrot
- Capsicum
- Onion
- Tomato ketchup – 2 tablespoons
- Mayonnaise – 1 tablespoon
- Cheese
- Lemon juice – 1 teaspoon
Method
- Add 7 Star Wholemeal Flour, 7 Star All Purpose Flour, salt and water into a bowl, and knead the mixture until a dough is formed. Cover it and set it aside for 15 minutes.
- Knead it once again, break the dough into equal-sized balls and dust them with flour.
- Using a rolling pin, roll them into flat round shapes, place each roti on a pan, and cook both sides (1 minute for each side).
- Place a cooking pan on the stove, add oil, green chilli, ginger and garlic cloves, and fry them slightly before adding the boiled, mashed potato into the pan.
- Mix them well and start adding the red chilli powder, coriander powder, roasted cumin powder, black pepper powder, roasted curry powder and salt. Mix well and let it fry for 2 minutes.
- Set the mixture aside to cool. Once the mixture has cooled down, start breaking it off into separate flat, oval-shaped pieces.
- Add oil to a non-stick pan and start frying the oval-shaped pieces.
- Add butter to the pan and cook the rotis once again to make them super soft.
- Apply the tomato ketchup to the surface of the roti and place two oval-shaped mixture pieces vertically on it.
- Sprinkle finely cut capsicum, tomato, carrot, cabbage and onion on top of the mixture and pour lemon juice over it. Then, add some mayonnaise and grated cheese for the final touch-up.
- Fold the roti from both ends and place a toothpick in the middle to keep it in place. Repeat the same for all Veg Frankies and serve them hot and spicy with your favourite dips.
