And just like that, we are back at Christmas – the most wonderful time of the year! But is it even possible to celebrate it amid this pandemic; you may ask. Well, don’t let anything ruin your Christmas spirit. Keeping the traditions alive will drape you with new hope, which is what this season is all about. Anyway, there’s nothing a tree, a gift, and a delicious slice of yule log cannot do to make someone feel all warm and Christmassy.
Ingredients – For the Cake
- 6 large eggs
- ½ cup – 7 Star Cake Flour
- ¼ cup – unsweetened cocoa powder
- ¾ cup – granulated sugar (divided)
- ¼ tsp – kosher salt
- Icing sugar to sprinkle
Method
- Preheat the oven to 350 degrees.
- Separate the eggs and whip the yolks and whites separately.
- Add a ¼ cup sugar for the whites and ½ cup sugar for the yolks; (start adding these gradually once the yolks look like melted butter and the whites turn into foam)
- Sift cocoa powder, flour, and kosher salt together; after that, add them to the yolk batter and gently mix the ingredients.
- Next, pour the yolk mixture into a mixing bowl, and gently fold in the egg whites in about three batches.
- Line a jelly roll pan with a large piece of parchment and grease it with cooking spray or a bit of butter.
- Into the prepared pan, pour the batter and spread out evenly.
- Bake for 12-14 minutes.
- Next, sprinkle a clean towel with powdered sugar and flip the cake on to it.
- Peel off parchment.
- Using the towel, roll the cake into a log and let it cool off completely.
Ingredients – For the Filling
- ¼ cup – Icing sugar
- 1 ¼ cup – Heavy cream
- 1 tsp – Vanilla
- A pinch of kosher salt
- For the filling, take 2 teaspoons of gelatin and sprinkle it over 2 tablespoons of water.
- Then mix the given ingredients and add the gelatin once the whipped cream reaches soft peaks.
- When cake has cooled off, unroll it and spread filling over it, after which it can be rolled back into a log.
- Place it in the fridge and let it chill, preferably for 1-2 hours.
Ingredients – For the Frosting
- ½ cup – Softened butter
- 1 ½ cup – Icing sugar
- 5 tbsp – Cocoa powder
- 3 tbsp – Heavy cream
- 1 tsp – Vanilla
- A pinch of kosher salt
- To make the frosting, beat together butter and powdered sugar until fluffy.
- Beat in the rest of the ingredients and you’ll get silky smooth frosting that can be used to cover the yule log.
- To finish off, dust yule log with a light smattering of powdered sugar for the perfect look.
