What is Chakki Atta Flour?

So, have you ever wondered what chakki atta flour really is? If you are a culinary enthusiast, chances are you definitely have. What we do know is that it is certainly the best option when it comes to making Indian dishes. But would it work the same way with bread and other baked items? Let’s find out.

The Milling Process

Chakki flour is known as a type of flour that originated in India and the difference is all due to the unique method of milling. Keep in mind that chakki flour is not whole wheat flour. Nonetheless, it is one of the most nutritious types of flour on the shelf. Going back to the method of milling, the Indian process of grinding wheat involves 2 round stones. One is stationary while the other rotates to grind the grains of wheat. The friction from the stones creates heat which takes off the starch and protein in the flour, therefore, chakki atta flour is different from the regular flours like all-purpose flour. Serendib Flour Mills uses the authentic Chakki Stones to mill their 7 Star Chakki Atta.

Moisture absorption

If you were to experiment with baking a loaf of bread using chakki atta flour, the result would be a dense dry loaf that wouldn’t be right on the palate. When it comes to wheat flour and other flours, looking at it from a chemistry perspective, they have more starch particles. When mixed with liquids, starch absorbs more water and swells up allowing your loaf of bread to be light, airy, and soft. This is not the case for chakki atta flour which contains very little starch. Therefore, a loaf baked with chakki flour would be lacking in moisture. However, chakki atta flour is perfect for Indian flatbreads which are thin and dry in texture. By using authentic production processes, Serendib Flour Mills ensures the flour has just the right amount of water absorption for chapati and long-lasting freshness.
