Souffle Pancakes

Pancakes are quite common in Sri Lankan households. But how about beating the monotony by sprucing up your pancakes and doing something different? Here’s how to make the ordinary pancake a little more interesting.

Ingredients

  • ¼ cup 7 Star Cake Flour
  • 2 large eggs
  • ¼ tsp pure vanilla extract
  • 2 tbsp sugar
  • 1 ½ tbsp milk
  • ½ tsp baking powder
  • 1 tbsp vegetable oil
  • 2 tbsp water

Method

  1. Separate egg whites and yolks and put the whites in the freezer for about 15 minutes.
  2. Add the vanilla and milk into the egg yolks and whisk well until frothy and thick.
  3.  Sift cake flour and baking powder into the egg yolk mix, whisk and set aside.
  4. Take the egg whites out of the freezer and begin beating. Add sugar as the whites become thick. You’ll find that the mixture becomes glossy and stiff peaks begin to form.
  5. Transfer the whisked egg whites gradually into the yolk mixture and gently mix with a spatula. Ignore air bubbles that form.
  6. Heat the pan and grease with butter or oil. Add 2 scoops of batter for each pancake and make the cake taller. After about 3 – 7 minutes, add a tablespoon of water and cover the pan.
  7. After another 2 minutes, open the pan, add another scoop of batter and cover the pan once more.
  8. After a few minutes, open the lid again and very gently flip the pancake. Add a tablespoon of water and cover and cook for about 5 minutes.
  9. Once done, the pancakes can be served drizzled with honey or whipped cream and berries.
