Ingredients
- 1 cup 7 Star Semolina
- 2 tbsp. oil
- ½ tsp. mustard seeds
- ½ tsp. cumin seeds
- 2 tablespoons crushed peanuts/almond/cashew (optional)
- 1 sprig of curry leaves
- 1 onion chopped
- 2 green chillies chopped
- ½ tsp. ginger chopped
- 2 ½ to 2 ¾ cups of water
Method
- Add 1 cup of semolina to a pan and dry roast on medium heat. Stir the semolina constantly and be careful not to let it brown as this will change the taste of the dish. Once done, leave it aside to cool.
- Heat 2 tablespoons of oil on a pan and add mustard seeds, cumin seeds, crushed nuts (optional), and let it fry until the ingredients brown.
- Add chopped ginger, green chillies, curry leaves, and onions. Sauté the ingredients until onions are transparent.
- Add water and ½ teaspoon salt. Taste test it; the solution needs to be a little salty.
- Bring water to a boil and set the flame on low.
- Pour in the semolina while stirring the water. Make sure there are no lumps.
- Cover the pan and let the semolina cook until all the water is absorbed. This ideally takes 2-4 minutes only.
- Open the lid and stir once more before switching the fire off. Let the upma sit for 5 minutes before serving.
