No matter what part of the world you may be living in, if you are a Sri Lankan, your taste buds will long for that authentic taste of spices, coconut and the fiery taste of curries. At a time like this, what could be better than some healthy Pol Roti that is easy to make and accentuates the flavour of chicken curry! Here’s the recipe for a healthy serving of Atta Pol Roti for the entire family to enjoy.
Ingredients
- 2 cups 7 Star Chakki Atta Flour
- 3/4 cups fresh scraped coconut
- 1 onion, chopped well
- 3–4 green chillies
- 2 sprigs of curry leaves, chopped well
- 1 tsp salt
- 3 tbsp ghee
- coconut oil for greasing the griddle
Method
- Pulse the scraped coconut and chillies together. You could also opt to chop the chillies and simply mix it with the coconut as well. This will make for a thicker roti dough.
- In a large bowl add in the atta flour, chopped onions and curry leaves, ghee and the coconut with green chillies. Add in salt and start mixing while adding tables spoons of water gradually. Mix and knead until the dough is nice and firm.
- Take a handful of dough and sprinkle a little flour on it. You can either flatten the dough out with your hands or roll it out with a rolling pin.
- Soon after rolling out your ball of dough, heat some oil on a griddle and layout the flat roti on it. Cook for about a minute and flip sides. Cook on both sides till spots appear on the roti and then take it off the pan.

Serve with spicy chicken curry or onion sambol (lunumiris) is also a great accompaniment to the dish.
