A Simple Rulang Aluwa Recipe to Fit the Bill This Avurudu

Ingredients

  • 7 Star Semolina – 100g
  • Sugar – 125g
  • Grated coconut – ½ cup
  • Coconut treacle – 3 tablespoons
  • Roasted cashew nuts
  • Cardamom powder – ½ teaspoon

Let the Avurudu Cooking Begin!

  • Roast the grated coconut to eliminate the moist nature and set it aside in a bowl.
  • Slightly roast your 7 Star Semolina on a low flame in a pan, until the aroma fills your kitchen, and transfer it into a bowl to cool down.
  • Add the sugar to a saucepan and pour water until sugar is covered. Stir on a low flame until the sugar dissolves.
  • Add the coconut treacle to the sugar syrup and mix well.
  • Then, add the slightly roasted, grated coconut, cardamom powder and roasted, chopped cashew nuts.
  • Add the semolina gradually and keep mixing until it starts to come together (do remember to follow this step on the heated yet switched off stove).
  • Transfer the mixture to a greased tray and flatten it with a spatula covered in butter.

Cut the flattened mixture into pieces, big or small and serve it at your Avurudu table to taste traditional Sri Lankan goodness with family and friends.

Tip: Cut the Rulang Aluwa to your desired pieces (traditional diamond shape is recommended) while it is still warm as cooling down stiffens the mixture, and let it cool for an hour.
