Semolina Sweetmeats for the Awurudu Table

The Sinhala and Tamil New Year is around the corner and we know our readers are busy with preparations. So, we thought we’d help out too by putting forward our best recommendations for the Avurudu Table using a healthy ingredient, 7 Star Semolina!

Prepared with an aromatic blend of pounded cardamom, and cloves, the flavour of this sweetmeat can definitely rival the rest of the items on your table. Semolina is roasted and mixed with thick sugar syrup or even condensed milk along with a blend of spices. Add a bit of cashew for a richer taste to this semolina treat.

Rava Laddu

This is more of a South Indian treat but nonetheless is loved by everyone. Semolina and coconut are dry-roasted while cardamom is ground with sugar into a powder. The semolina mix is then added to the spice and further ground. Cashew and raisins are fried in ghee and added to the mix. Once the dough is formed into balls, it’s ready to eat!

Bibikkan

This is the famous Sri Lankan coconut cake where the star ingredient is coconut. Flour, semolina and coconut form the base while many other ingredients like jaggery, raisins, melon preserve, cashew and many spices are incorporated to bring a rich flavour to the cake. Bibikkan is one of the most loved sweetmeats on the Avurudu Table, but it certainly is no easy task when it comes to preparing it.

Rava Kesari

Yet another South Indian delicacy, this treat is the sweetest one on the list. Semolina is mixed with ghee over medium heat and then added to boiling water. Cardamom and sugar are then added to the mix along with Kesari colouring. Cashew and raisins are usually sprinkled on top for a pop of taste.
